I’m diving into this gorgeous bowl of blueberry ice cream as we speak. You won’t believe what I’m about to tell you, it’s raw, suitable for vegans and you only four ingredients! (and no bananas)
Blueberries are super fruits! They are extremely high in antioxidant and have anti-inflammatory properties which combat oxidative stress. They are also the ultimate memory food and are great for your eyes. I have also used them in my Energising Smoothie Bowl! Another ingredient we have here are avocados, they are good healthy fats and is also high in lutein, antioxidant and many other benefits that are great for your skin too! We also have limes which is good source in Vitamin C and also aids digestion.
Blending all these tremendous healthy foods together and we have the most delicious, creamy dessert ever!
Ingredients (4-5 scoops)
140g Frozen Blueberries
1 Lime, peeled
2-3 Tbsp Honey or Agave Nectar
1. The first thing you need to do is prep your blueberries, give them a good wash and freeze them overnight in a freezer bag. Once they are FROZEN, the party begins !
2. Put all the ingredients in a food processor or blender and let it blend for 5 minutes. For the first minute or so, it doesn’t look like its being blended, but have patience and it will turn into yummilicious dessert.
3. You should have a thick consistency like this, if it is not sweet enough for you, you can always add more honey or sweetener of your choice.
4. Scoop all the goodness out of your blender or food processor into a small container and let it freeze for at least two hours, but preferably overnight.
Grab your spoon and indulge yourself into a creamy, guilt free ice cream!
