As we are reaching for warmer temperatures, bathing suit season is coming in. While you stash in your healthy salads, prepping for your summer body, there isn’t much in the dessert department. Fear not…We got you covered! Forget about the sugary store-bought desserts and whip up this healthy strawberry ice cream made with just four ingredients and you can indulge yourself in 5 minutes!
440 g frozen strawberries
80g plain yoghurt (full fat or non fat)
2-3 tablespoon of raw honey or agave nectar
1 tbsp of lemon or lime
The first thing you need to do is prep your strawberries by removing the green hull from the strawberry and then rinse your strawbs under the tap. Then layer some kitchen towels so your strawberries can dry out a bit before we freeze them. Then place them in zip-lock or freezer bags and let it chill in your freezer overnight.
THE STRAWBS ARE NOW FROZEN! Put all the ingredients in a food processor or blender and let it blend for 5 minutes. For the first minute or so, it doesn’t look like its being blended, but have patience and it will turn into yummilicious dessert.
You will end up with something like a cream-ish slush-ish consistency.
If you plan to eat it another day, do put it in an air tight container and freeze it immediately and enjoy it within 3 days!
Instead of using strawberries, you can also use blueberries, mango, kiwi….any fruit you fancy for a sweet delight after your meal or snack :)
